It’s fall, and that means we’re breaking out all the fall flavor favorites! This recipe is part of our Food with Purpose recipe collection, which means it’s not only delicious, but packs a nutrient punch with more fiber, vitamins, and minerals than you would normally find in a traditional oatmeal cookie. Pumpkin Walnut Oatmeal Cookies

Yield: 28 cookies

2 cups all purpose flour
1 1/3 cup old-fashioned oats
1 tsp baking soda
¾ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
1 2/3 cup sugar, granulated
2/3 cup canola oil
2 TBSP molasses, dark
1 cup canned pumpkin
1 tsp vanilla extract
1 cup walnut pieces

1. Preheat oven to 350F.
2. In a bowl, mix together flour, oats, baking soda, salt, cinnamon and nutmeg.
3. In another bowl, mix together sugar, oil, molasses, pumpkin and vanilla extract.
4. Add dry ingredients into the wet, slowly folding to combine and fold in walnuts.
5. Scoop 1.5 oz per cookie, flatten with hands and place on parchment linked baking tray 2” apart.
6. Bake for 16-18 minutes.
7. Cool before removing from pan.
Per cookie: 175 cal, 8 g fat, 0.7 g sat fat, 24 g carbs, 1 g fiber, 100 mg sodium, 2 g protein
