- 12 oz canned garbanzo beans drained
- ¼ cup light mayonnaise
- 1 Tbsp lemon juiced
- ½ tsp ground black pepper ground
- ¼ cup celery diced fine
- ¼ cup onions diced fine
- ¼ cup fresh chives diced fine
- 2 tomatoes sliced
- 8 slices multigrain bread
- 4 tsp dijon mustard

In small bowl, using a fork, coarsely mash the chickpeas. Stir in the chives, finely diced onion and celery.
In separate small bowl, stir together the mayonnaise, mustard, lemon juice and pepper; stir mayonnaise mixture into chickpeas.
Toast bread if desired and build sandwich with salad, tomato slices and arugula.
