Ingredients

  • 12 oz canned garbanzo beans drained
  • ¼ cup light mayonnaise
  • 1 Tbsp lemon juiced
  • ½ tsp ground black pepper ground
  • ¼ cup celery diced fine
  • ¼ cup onions diced fine
  • ¼ cup fresh chives diced fine
  • 2 tomatoes sliced
  • 8 slices multigrain bread
  • 4 tsp dijon mustard

Instructions

  • In small bowl, using a fork, coarsely mash the chickpeas. Stir in the chives, finely diced onion and celery.
  • In separate small bowl, stir together the mayonnaise, mustard, lemon juice and pepper; stir mayonnaise mixture into chickpeas.
  • Toast bread if desired and build sandwich with salad, tomato slices and arugula.
