Pecan Pie Stuffed Date

Servings12
Calories55kcal

Ingredients

  • 3 Tbsp Old Fashioned Dry Oats
  • 3 Tbsp pecans chopped
  • 1½ Tbsp Maple Syrup
  • ½ tsp Vanilla flavoring
  • ⅓ cup water
  • ¼ tsp salt
  • ⅛ tsp Ground Cinnamon
  • 12 each whole pitted dates

Instructions

  • Place oats into a blender or food processor and pulse into rough chopped “flour texture.”
  • In a small pot or microwave safe bowl, mix oats, pecans, water, maple syrup, vanilla extract, salt, and cinnamon.
  • Heat according to instructions below and chill in the fridge for 30 minutes before stuffing the date.
  • Microwave:
Microwave for 1 minute, then stir — the mixture will look liquid; that’s expected. Microwave for 1 additional minute until it thickens. Take it out, give it a good stir and allow the mixture to sit for about 15 minutes so it can thicken further into that gooey pecan-pie–style texture.
  • Stovetop:
You can also toss the ingredients into saucepan let it come to a slow simmer and then turn off the heat. It thickens quickly.
  • Cut a slit in each date lengthwise, ensure no pit is inside.
  • Stuff dates with 1-1.5 tsp of mixture and serve chilled or at room temperature.
