Ingredients
- 3 Tbsp Old Fashioned Dry Oats
- 3 Tbsp pecans chopped
- 1½ Tbsp Maple Syrup
- ½ tsp Vanilla flavoring
- ⅓ cup water
- ¼ tsp salt
- ⅛ tsp Ground Cinnamon
- 12 each whole pitted dates
Instructions
- Place oats into a blender or food processor and pulse into rough chopped “flour texture.”
- In a small pot or microwave safe bowl, mix oats, pecans, water, maple syrup, vanilla extract, salt, and cinnamon.
- Heat according to instructions below and chill in the fridge for 30 minutes before stuffing the date.
- Microwave:Microwave for 1 minute, then stir — the mixture will look liquid; that’s expected. Microwave for 1 additional minute until it thickens. Take it out, give it a good stir and allow the mixture to sit for about 15 minutes so it can thicken further into that gooey pecan-pie–style texture.
- Stovetop:You can also toss the ingredients into saucepan let it come to a slow simmer and then turn off the heat. It thickens quickly.
- Cut a slit in each date lengthwise, ensure no pit is inside.
- Stuff dates with 1-1.5 tsp of mixture and serve chilled or at room temperature.
