Instructions
Soak wooden skewers in water for at least 30-120 minutes.
Marinate Vegetables
Chop fresh herbs and mince garlic and whisk into a bowl with oil, salt, and pepper until combined.
Wash all produce and pat dry, cut into 1” pieces and place in marinade for 30-120+ minutes (in fridge).
Cooking Instructions
Skewer 1 piece of each vegetable on soaked wooden skewers and repeat so there are 2 pieces of each vegetable on each skewer.
Preheat grill to high heat and cook 2-3 minutes per side until veggies are tender.
