Ratatouille Style Skewer

Equipment

  • 4 12" wooden skewers

Ingredients

  • 2 tsp parsley fresh
  • 2 tsp oregano fresh
  • 2 tsp basil fresh
  • 1/2 tsp rosemary fresh
  • 1/2 tsp thyme fresh
  • 1 each garlic clove
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup avocado oil
  • 1 each eggplant
  • 8 each grape tomatoes
  • 1 each zucchini
  • 1 each yellow squash
  • 1 each yellow onion

Instructions

  • Soak wooden skewers in water for at least 30-120 minutes.  

Marinate Vegetables

  • Chop fresh herbs and mince garlic and whisk into a bowl with oil, salt, and pepper until combined.   
  • Wash all produce and pat dry, cut into 1” pieces and place in marinade for 30-120+ minutes (in fridge).   

Cooking Instructions

  • Skewer 1 piece of each vegetable on soaked wooden skewers and repeat so there are 2 pieces of each vegetable on each skewer. 
  • Preheat grill to high heat and cook 2-3 minutes per side until veggies are tender.
