Equipment
- 4 12" wooden skewers
Ingredients
- 2 tsp parsley fresh
- 2 tsp oregano fresh
- 2 tsp basil fresh
- 1/2 tsp rosemary fresh
- 1/2 tsp thyme fresh
- 1 each garlic clove
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/4 cup avocado oil
- 1 each eggplant
- 8 each grape tomatoes
- 1 each zucchini
- 1 each yellow squash
- 1 each yellow onion
Instructions
- Soak wooden skewers in water for at least 30-120 minutes.
Marinate Vegetables
- Chop fresh herbs and mince garlic and whisk into a bowl with oil, salt, and pepper until combined.
- Wash all produce and pat dry, cut into 1” pieces and place in marinade for 30-120+ minutes (in fridge).
Cooking Instructions
- Skewer 1 piece of each vegetable on soaked wooden skewers and repeat so there are 2 pieces of each vegetable on each skewer.
- Preheat grill to high heat and cook 2-3 minutes per side until veggies are tender.
