Love Pears? Try This Gingerbread Cake with Pears and Salted Toffee Sauce Recipe

Did you know that December is National Pear Month? All December long, we’re recognizing the flavor and versatility of this delicious fruit. In celebration, we’ve got the perfect recipe to serve this holiday season. Check out this delicious gingerbread cake with pears and salted coffee sauce recipe below:

Salted Toffee Sauce

    • 1 stick unsalted butter
    • 1 cup light brown sugar
    • ½ cup heavy cream
    • ¼ tsp kosher salt

Directions:

    1. Combine all the ingredients in an appropriate sized sauce pan. Bring to a boil over medium heat and cook for approximately 2 minutes, stirring often, until slightly reduced.  Set aside until later in the recipe.

Pears:

    • 2 firm pears (preferably Bosc, or Bartlett)

Directions:

    1. Core the pears and cut into 1/8” slices

Gingerbread Cake Batter

    • 1 stick unsalted butter
    • ½ cup packed light brown sugar
    • 2 each egg
    • 1 tbsp vanilla extract
    • 1 cup molasses
    • 1 cup hot water
    • 2 cups Miffy’s All-Purpose Baking Mix
    • 2 tsp baking soda
    • 1 tsp ground cinnamon
    • 1 tsp ground ginger
    • ½ tsp ground allspice
    • ½ tsp salt

Directions:

    1. Sift together flour, baking soda, cinnamon, ginger, allspice, and salt into a bowl. Reserve.
    2. Whisk together molasses and hot water into a separate bowl. Reserve.
    3. Using a kitchen aid mixer, cream together the butter and brown sugar together at medium speed for 4-5 minutes until light and creamy.
    4. Add the egg and vanilla. Mix briefly to incorporate.
    5. Alternately mix in the flour mixture and molasses in 3 batches at low speed. Stop and scrape down the sides of the bowl between additions.
    6. Preheat oven to 350 degrees.
    7. Grease an 8oz ramekin. Place 2 ½ tbsp salted toffee sauce, 4 slices of pear, ½ cup of gingerbread batter. Cook for approximately 14-15 minutes or until the cake is cooked through.
    8. Cool cake on a rack for 5 minutes. Run a thin knife around edge of the ramekin, then invert a onto a plate. Replace any pears that stick to the ramekin. Serve warm or at room temperature.
