Farmers Market Fresh: Garlic Zucchini Wedges

Summer is the season of abundance, when many of our favorite fruits and vegetables are at their peak in both flavor and freshness.  Eurest’s network of local farms across the country allow chefs and dietitians to serve ingredients that are fresher, travel fewer miles, and support the communities around our marketplaces.

That’s the spirit behind our Farmers Market promotion, giving guests direct access to produce from their areas, making it easy to bring seasonal favorites into their own kitchens.

One of those seasonal standouts?  Zucchini.

WHY WE LOVE ZUCCHINI

Mild in flavor and endlessly versatile, zucchini plays well in almost any dish and truly shines on the grill.

According to Division Wellbeing and Sustainability Director Michelle Sadlowski, MS, RDN, grilled zucchini is a great alternative for adding veggies to your plate at a summer barbecue over fried foods or mayonnaise-based salads.

“Zucchini is a good source of lutein and zeaxanthin which are phytonutrients that support eye health,” says Michelle. “Think of it as nature’s blue light filter.”

Leaving the skin on is key to  getting the most out of every bite . That’s where much of the dietary fiber lives, which plays an important role in supporting gut health.

Emily Barrett, MSCN, RD, LDN, Wellbeing and Sustainability Project Manager, also highlights its immune boosting potential :  “Zucchini is a good source of vitamin C – just one cup provides around 25% of your daily value.”

Plus, its high water content also makes it a great option for staying hydrated in the summer heat.
