Spinach and Artichoke Boursin Salad with Green Goddess Dressing
Ingredients
- 6 cups Baby Spinach
- 1 cup Artichoke Hearts chopped
- ¼ cup Red Onion
- 1 cup Grape Tomatoes
- 6 oz Boursin Bites Garlic & Herb
- 1 cup Garbanzo Beans canned drained
- 1 Tbsp Avocado Oil
- 1/8 tsp Salt
- 1/8 tsp Ground Black Pepper
- 1 cup Primal Kitchen Green Goddess Dressing
Instructions
Preheat oven to 350F degrees. Toss garbanzo beans with avocado oil, salt, and pepper in a bowl. Place on a sheet pan and roast in oven until dried but not too hard, about 45 minutes. Toss a few times during cooking. Remove from the oven and cool.
Wash and dry all produce. Julienne onions and cut tomatoes in half.
In each serving bowl or plate, place 1.5 c spinach, ¼ c tomatoes, ¼ c onions, ¼ c artichokes, 1.5 oz cheese cubes (about 9 cubes), 1 T garbanzo beans, and drizzle 2 floz dressing.
Notes
Chef Tips: May use feta or mini mozzarella balls in place of the Boursin Cheese
