Swiss Chard Parmesan Egg Bite Strata

Ingredients

  • 1/2 cup Alfredo sauce
  • 2 ea Eggs whole, large
  • 3 Tbsp half & half
  • 2 1/2 cups French bread cubed
  • 1 spray spray oil
  • 4 cup Swiss chard
  • 1/4 tsp garlic peeled & minced
  • 1/3 ea yellow onion diced
  • 1/4 cup grated parmesan cheese
  • 3/4 tsp avocado oil
  • 1/8 tsp ground nutmeg

Instructions

  • Crack eggs into a bowl and scramble.  
  • Mix with alfredo sauce and half and half. 
  • Pre-heat oven to 350 degrees.  
  • Cut French bread into ½" cubes and place on a parchment lined baking sheet.  
  • Crisp in oven for 3-4 minutes but make sure that it does not get brown.   
  • Wash Swiss chard and pat dry, steam and squeeze out excess liquid.  Slice into thin strips.
  • Heat oil in a large sauté pan, add garlic and onion, and sauté for 3-4 minutes.  
  • Remove from heat and add chopped Swiss chard, nutmeg, and parmesan cheese and mix until combined.  
  • Spray muffin pans and divide cubed bread into 8 sections and press down slightly.  
  • Pour ¼ c of strata base into each muffin tin and allow the bread to soak up the mixture for about 20 minutes before baking.   
  • Place in oven and bake for 12-16 minutes or until set.  Cool slightly before removing each piece from the muffin pan.  Serve Hot. 

Notes

May substitute olive or canola oil.
