Swiss Chard Parmesan Egg Bite Strata

Ingredients
- 1/2 cup Alfredo sauce
- 2 ea Eggs whole, large
- 3 Tbsp half & half
- 2 1/2 cups French bread cubed
- 1 spray spray oil
- 4 cup Swiss chard
- 1/4 tsp garlic peeled & minced
- 1/3 ea yellow onion diced
- 1/4 cup grated parmesan cheese
- 3/4 tsp avocado oil
- 1/8 tsp ground nutmeg
Instructions
- Crack eggs into a bowl and scramble.
- Mix with alfredo sauce and half and half.
- Pre-heat oven to 350 degrees.
- Cut French bread into ½" cubes and place on a parchment lined baking sheet.
- Crisp in oven for 3-4 minutes but make sure that it does not get brown.
- Wash Swiss chard and pat dry, steam and squeeze out excess liquid. Slice into thin strips.
- Heat oil in a large sauté pan, add garlic and onion, and sauté for 3-4 minutes.
- Remove from heat and add chopped Swiss chard, nutmeg, and parmesan cheese and mix until combined.
- Spray muffin pans and divide cubed bread into 8 sections and press down slightly.
- Pour ¼ c of strata base into each muffin tin and allow the bread to soak up the mixture for about 20 minutes before baking.
- Place in oven and bake for 12-16 minutes or until set. Cool slightly before removing each piece from the muffin pan. Serve Hot.
Notes
May substitute olive or canola oil.
